We seemed to go from one financial crisis to another. Everything felt like an uphill battle. We were resourceful, but never seemed to be able to gain traction.The day we decided to set aside money for an emergency changed our lives forever. At first, the amount of money coming in did not change, but month by month, decision by decision, lesson by lesson we increased the value of the money we did have. We began to plan for our future, we were grateful for what we had. We were able to rise to any challenge and let me tell you there were many!When groceries were sparse, and there were a few days remaining before the next payday, I would chop up some onions and whatever vegetables I found in the fridge, sauté them in butter, add to that any dribs and drabs of veggies hiding in the freezer,under the bread, cover them all with boiling water, simmer and season.M-m-m-m-m! The house was filled with mouth watering aroma, it welcomed home children from school and a working Dad. It filled our tummies.One day while preparing another large pot of soup, my youngest asked what we were having, and I declared, “Millionaire Soup!”From that day forward, whenever we are stretching our resources to meet our financial goals or life challenges, we serve “Millionaire Soup”.It has earned the status of delicious comfort food and is requested often, many a problem has been solved over a bowl of steaming “Millionaire Soup”.For us it represents an abundant mindset.Enjoy, I hope it serves you and yours as well as it does my family.- - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - Millionaire Soup Recipe @MONEYLEARNTOLIVEWITHITYou will have fun experimenting with the vegetable and seasoning combinations and will soon find your own family favourite flavour.Remember to season as you go. Fill the kettle with water and put it on to boil as you prepare the vegetables.Sauté in 1/3 cup of butter over high heat for 2 minutes, in a large soup pot:2 cup diced onions2 cup thick diagonally sliced carrots2 cup thick diagonally sliced celery(you can add or substitute any other vegetables you may have on hand, cooked chickpeas and lentils are a great addition too!)Immediately cover vegetables with boiling water.Add 1 large Bay leaf or 2 small ones.Quickly bring to a boil and then reduce the heat and simmer for 20 minutes or until vegetables are tender.Stir in:Salt and ground black pepper to taste.This is your base.Prepare for serving:Spoon 1 ladle (2/3 cup per adult/2 small children) into a medium pot, add 2 cups additional water, and 1/2 cup of; macaroni noodles, or broken pieces of spaghetti or linguine, or rice. If you enjoy Tortellini or mini Ravioli, these are great additions as well and may require a bit more water.Boil until pasta or rice is tender, season to taste.Remove from heat and serve.Garnish individual servings with grated Parmesan or Romano cheese.Unused base and leftover soup can be refrigerated for 5 days.- - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - Finding opportunities @MONEYLEARNTOLIVEWITHITToday we learned:1.
